I just love Harry & David’s truffles. They are the dreamiest candy, all dressed up, and decadent to their very core. I reside in Southern Oregon where Harry & David originated, so its products have been a part of my life since I was a child. My favorite candy of theirs was always the truffle, so this Mother’s Day, they seemed like a great way to celebrate and bring back some fond memories.

Since truffles melt down easily, I decided to use them in a decadent cookie recipe that is part of a big Mother’s Day dessert board. I used the truffles to make a dark chocolate reduction that I then mixed into the cookie batter, making these cookies deep, rich, and impossible to resist.

I reduced the truffles by melting them and whisking to a smooth, deliciously drip-worthy consistency. This is the only chocolate that these cookies need, and trust me when I say, the truffle flavor shines through brilliantly. Just make sure you check the chocolate often when using the microwave (or melt them slowly over low heat if using the stove), since chocolate can burn easily.

In addition to the melted truffles, there are only seven other simple ingredients needed to create these little chocolate gems. The cookies bake up perfectly soft and are wonderful eaten plain or dipped in melted chocolate. You could even add some fruit and ice cream to the top and turn it into a base for a delightful sundae.

The substitutes

Avoiding gluten or dairy shouldn’t hinder your Mother’s Day surprise. These are the substitutions for gluten- and dairy-free diets that I always have in the pantry.

Bob’s Red Mill 1:1 Gluten Free Baking Flour is a wonderful all-purpose sub, and it’s cup for cup, so you can use the same measurements as you would all-purpose flour.

Miyokos Butter is a plantbased brick that closely resembles dairy butter not only in its look, but its taste as well. It melts, browns, and spreads just like real butter, and substitutes great in this recipe. Use it as a 1:1 ratio sub, same as the flour, so the recipe measurements will not change.

The truffles contain dairy, so those allergic should be aware of this. Those simply wanting to limit the amount of dairy should note there is 1/2 cup of truffle reduction in the entire recipe.

I used these cookies as part of a beautiful Mother’s Day dessert boardbecause why give Mom one dessert for Mother’s Day when she can have a whole array of her favorite goodies? To create this board, you’ll need the following Harry & David treats:

  • Limited edition truffles (Go for the strawberry ones. They are magnificent!)
  • Hazelnut coffee spoons (These hard candy spoons are a perfect pop of flavor in any hot drink)
  • Lemon almonds (Sooo refreshing… can a nut be refreshing? Because this one definitely is.)
  • Milk chocolate enrobed apricots (Real fruit candy. Need I say more?)
  • Melted dark chocolate truffles (They make for the BEST melted chocolate)
  • Blueberries (Because every dessert board needs a spot of fruit, both for a pop of color and a palate cleanser between rich desserts)

Putting it all together

Dessert boards may appear challenging, but they are very easy to create. Begin with selecting an array of goodies that complement each other with similar flavorsFor this board, my theme was chocolate.

Start with your main items, which are the homemade cookies in this case. But the main item can be whatever Mom’s favorite treat is or what you want the focus of the board to be. There are no true rules to this. Give the cookies “center stage” so they draw the eye. You can add a few extra in a different spot to create balance across the board, like how I put a few on the second, smaller plate to create some cohesion.

Then arrange the other treats around your focal points. Don’t worry about it looking perfect — there’s no “right” way to build a board — but it is pleasing to the eye if you create a balanced look again by placing the same or similar treats on each side of the board. For example, I used wafer rolls on both sides, but arranged them in different directions. I also used truffles and berry galettes, but put them in different spots and used different flavors and colors. If it begins to feel cluttered, simply remove an item. You can always create the board again if (or more likely when) all the treats are eaten.

Add some greenery and florals to give it a fresh, vibrant feel and match the season. The most important thing is to have fun and make it your own. As long as it has all of Mom’s favorite treats, it’ll be the perfect Mother’s Day surprise.

Mother’s Day Mimosas

Ingredients:

For the Lemon + Lavender Mimosa (makes 9 mimosas)

  • 2 cups water (divided)
  • 1 cup sugar (packed)
  • 2 tbsp dried lavender (culinary grade)
  • 2 cups lemon juice (preferably freshly squeezed)
  • 1 bottle Harry & David Sparkling Wine
  • Fresh lavender (for garnish)
  • Lemon slices (for garnish)

For the Peach + Thyme Mimosa (makes 4 mimosas)

For the Pear + Rosemary Mimosa (makes 1 mimosa)

Instructions: 

For the lemon + lavender mimosas

  • In a medium, heavy-bottomed pot, combine 1 cup water with the sugar. Place over medium-high heat and bring mixture to a boil, stirring often to dissolve sugar. Reduce heat to medium-low and add the dried lavender. Stir and simmer for 1 minute. Turn off heat, cover, and allow lavender to steep and syrup to cool; 20 minutes.
  • Strain syrup and discard the lavender. Place strained syrup in the fridge to chill completely; around 30 minutes.
  • In a pitcher combine chilled, freshly squeezed lemon juice with the lavender simple syrup. Stir thoroughly to combine. Stir in the remaining 1 cup of cold, filtered water. Place in the fridge until cocktails are ready to be made.
  • When ready to serve, fill each glass with about 1/3 cup of sparkling wine. Top with 1/3 cup of the chilled lemon-lavender-ade. Garnish with a sprig of fresh lavender or a lemon slice. Serve immediately.

For the peach + thyme mimosas

  • In a small saucepan, combine water, sugar, and sprigs of thyme. Bring mixture to a boil; lower to a simmer and continue to cook for 5 minutes. Remove from heat, stir, and completely cool in the refrigerator; about 15 minutes. Remove sprigs of thyme and pour the syrup into a blender. Add the peaches; purée mixture until combined and smooth. Divide the peach purée evenly between 4 glasses. Pour sparkling wine into each glass, and serve.

For the pear + rosemary mimosa

  • Combine all ingredients into a chilled mimosa glass, garnish with a slice of pear and sprig of rosemary.

Here’s a look at the history of Mother’s Day and how it has evolved over the years, as well as a reminder of just how essential this day dedicated to moms everywhere really is.

Earliest forms of Mother’s Day

The tradition of celebrating mom precedes the creation of the modern Mother’s Day, dating far back into recorded times. Most historians believe that civilization’s earliest celebrations of motherhood occurred in ancient Greece during a festival honoring the “mother of the gods,” Rhea, who was considered a symbol of female fertility, motherhood, and the passing of one generation to another.

This jubilant festival was typically held in the spring, in the month of March or April, and involved parades, large party-like gatherings, and bountiful feasts. Men and women would also bring offerings, including flowers and fruits, that they would dedicate to Rhea as they prayed for her blessings.

Greece wasn’t alone in its early appreciation of “Mom.” Other early cultures also enjoyed similar celebrations of motherhood, including the ancient Romans, Egyptians, Chinese, and Indians. In each of these populations, members of the public gathered in large groups to honor their respective mother figures: Roman goddess Cybele, queen of the pharaohs Isis, Chinese “mother of all mankind” Nuwa, and Indian mother figure Durga. The festivals often included formal processions, masks and costumes, dancing and singing, prayer, immense communal meals, and the offerings of countless gifts and flowers for each of these beloved women.

The History of Mother's Day

A U.K. holiday is born

The first more modern celebration of Mother’s Day started as an event now known as Mothering Sunday, an annual holiday in the United Kingdom that can be traced back to the 16th century.

According to Dr. Paula Gooder, canon chancellor of London’s St. Paul’s Cathedral, “The history of Mothering Sunday is that on the fourth Sunday of Lent, a day also known as ‘Laetare Sunday’ when fasting was suspended and refreshment taken, people would return to their ‘mother churches’ — the place where they were baptized — for worship. Because this would often be in or near their home parish, they would then go home to visit their mother,” she says.

“In the U.K., we now call the day ‘Mothering Sunday’ and remember all those who have ‘mothered’ us through our lives, including the church,” Gooder told us. “This changes the day from being focused solely on our own mothers and instead focuses our appreciation on the experience of being cherished and nurtured by whoever performed that act. This is an important shift as it reminds us to be thankful for all those kinds of ‘mothering’ experiences.”

Mother’s Day in America takes shape

According to Molly Murphy MacGregor, executive director and cofounder of the National Women’s History Alliance, the earliest American Mother’s Day celebration occurred in 1872, when Boston poet, pacifist, and women’s suffragist Julia Ward Howe set out to establish a special day for mothers — and dedicated to world peace — following Europe’s bloody Franco-Prussian War, which led to more than 180,000 deaths.

Howe’s efforts gained popularity for several years, in and around Boston in particular. But, over time, the movement she inspired gradually lost steam, and an organized effort to celebrate moms in the U.S. disappeared for more than a decade.

That all changed at the turn of the century, however, when West Virginia activist and early community service advocate Anna Jarvis began campaigning for a special day to honor American mothers. Unlike Howe’s efforts to connect the celebration to world peace, Jarvis took a different tack: She drew inspiration for the creation of a national holiday honoring mothers from the death of her own mom, Ann Reeves Jarvis, in 1905.

Deeply impacted by the loss of Ann — who was known as “Mother Jarvis” and had campaigned tirelessly for better sanitation and health conditions throughout the South — Anna Jarvis set out to create a day to honor mothers everywhere. She started writing letters to community leaders, politicians, and other local officials, urging their support for the creation of a federally recognized Mother’s Day celebration.

And her efforts paid off. In 1908, the first official Mother’s Day celebration took place at a Methodist church in Grafton, West Virginia. Thousands attended, paying tribute to their mothers through speeches as well as countless gifts and dedications, including flowers and handmade cards.

Following the success of that initial local Mother’s Day celebration, Jarvis began pushing to make the occasion even bigger. She again gave countless speeches and interviews on the subject, wrote letters to newspapers and magazines, and lobbied politicians for their support of the creation of a national holiday. And, once again, she was successful: President Woodrow Wilson officially signed a proclamation in 1914 recognizing Mother’s Day as a national holiday that was to be celebrated on the second Sunday in May — a date that holds true to this day.

Can you tell us about your background? What led to you becoming an artist?

From the beginning, I’ve tried to find aesthetics in different art styles. I have experimented with a lot of different styles to find my “cup of tea,” with the sole aim of creating magic and becoming a stellar artist through drive and devotion. I’ve worked my way here, but I still have a lot of room to improve.

How did you get into NFT art?

NFTs are the talk of the town and a big opportunity for every artist. I still remember the first time I heard the term “NFT” and how it would change the way people look at digital art. I was so excited and intrigued by this new technology that I pulled a couple of all-nighters to learn and create my first NFTs. My pursuit of staying ahead of the curve in developing and learning new art styles, paired with my vision to grow as a digital artist, led me to NFTs.

Tell us about your mother. What kind of woman is she, and how has she influenced your life?

My mother is a gem of a person. I am where I am today because of her sacrifice and blessings. She has always been there for me, be it cheering for me at school presentations or pushing me to bring out the best in myself. In fact, I created my first piece of artwork for my mother’s birthday. It was a simple design, but to her it was priceless, and her eyes light up every time she looks at it. She has truly inspired me to become a better artist. I can never repay my mother.

NFTs have become a “thing” lately. Every collection is unique, and you can make such a big impact with them. I see them as a way for me to get my art out into the world in a way that can benefit charities and help organizations raise awareness for important causes.

How did you develop your artistic style?

My mom noticed my interest in art, so she decided to put me in art lessons when I was five. For years, I gradually developed my skills, and now I can take on commissions that people really love.

What was your inspiration for these pieces?

For this NFT collection, my main inspiration was my own imagination. One of my personal goals is to have my own flower garden, and I made these look exactly like I want my garden to look. For features like the clothes and hairstyles, I selected traits that I find most attractive.

Tell us about your mother. What kind of woman is she, and how has she influenced your life?

I always tear up when I think about my mom. She is the most important person in my life. She came from a very poor family that lived on the street, but she has worked really hard so I don’t have to go through what she did.

She is the one who keeps me on track. At times, my life has been really difficult, but whenever I think of her, it always makes me want to go back on the right track. She inspires me to want to be as strong as she is, and I always want to do my best to make her the happiest mom ever.

“She’s never wavered, never complained,” he says. “Knowing Tori before she was a mother and seeing her motherly instincts kick in has been so special. She’s just so strong.

“But I’ll say, it’s been a journey.”

Blossoming love

Pals at the University of Arizona, the Foles blossomed into a couple after graduation, reconnecting as Nick was embarking on his career as a quarterback for the Philadelphia Eagles.

The budding star was in LA for a trading card event and called Tori to “catch up.” That’s when, he says, “God revealed our attraction for each other in a unique way that we weren’t expecting.”

Though he was in Philly and she was living in Portland, they cemented their romance with some long-distance dating and stolen weekends together.

“The foundation of who we have been and where we began was our friendship,” Nick says.

That bond proved crucial when they were forced to tackle challenges that would have sacked other couples.

First sign of trouble

While at a concert in Portland, Oregon, in 2013, Tori suddenly was overcome with feelings of weakness and nausea. “I just felt terrible…like I was going to pass out,” she says.

When the illness persisted the following day, she went to a doctor, who wrote it off as a “virus.”

The feeling just wouldn’t go away, though, so she visited a California neurologist, who diagnosed her with POTS [Postural Orthostatic Tachycardia Syndrome], a little-known, debilitating neurological disease.

“I couldn’t spend more than a few minutes on my feet,” she says. “I didn’t know how I was going to do it.”

But she did know she could count on Nick to be there to help — and make things better.

Taking the next step

He flew Tori and her entire family to Arizona, where she would get treatment at the Mayo Clinic, and he would propose to her at his uncle’s home in Scottsdale in February 2014.

“Everyone came out, yelling, and jumping up and down,” he recalls. “I put the ring on, and we kissed and hugged and probably cried. It took our mind off what was going on.”

Two years later, the Foles were ready to be parents, but Tori was concerned about how her POTS would affect her ability to become a mom.

When her doctor encouraged her, they moved ahead — but Tori struggled with her pregnancy.

“I was extremely sick for the first 20 weeks,” she admits. Despite the early troubles, she gave birth to a healthy baby daughter, Lily, on June 16, 2017.

Their winning streak continued when Nick led Philly to an improbable Super Bowl win in 2017. After the season, he signed a big contract with the Jacksonville Jaguars, and Tori got pregnant again.

Near-death experience

But misfortune sacked their happiness once more. Fifteen weeks into her pregnancy, Tori came down with a sore throat, followed by a fever. Having gone to the ER but sent home to rest, she awoke later that night to her water breaking and rushed back to the hospital.

“It was the same pain as delivering at 40 weeks. It was full-on labor,” Tori says. “I had streptococcus pneumonia in my bloodstream. I was on my way to becoming septic.”

Tragically, the unexpected illness caused a miscarriage, and they lost the baby. But the early labor saved Tori’s life. “I wouldn’t have gone back to the hospital again if it weren’t for miscarrying,” Tori admits. “That baby was like an angel that saved me.”

“Life has gone on, but that child will always be part of our journey,” Nick adds.

Triumph over tragedy

Happily, the Foles went on to have another child, Duke, in June 2020. Tori says his arrival brought “restoration,” for sure.

“We know how much he’s meant to be here,” Tori says. “To have everything that happened, happen, he wouldn’t be here otherwise.”

For his part, Nick is inspired by Tori’s triumphs over tragedy and her ability to use that experience to excel as a mother.

“Breastfeeding, changing diapers — she’s exhausted all the time, and with POTS it’s tenfold,” he says. “She never complains. She just cares so much for these little beings.”

Tori recognizes their path has not been an easy one, but it has led to her being the mom she is today.

“If you start comparing your journey to others, then you can easily start to feel like you’re not good enough, or your kids don’t have a great mom. But I think it’s important to know that God has you on a path that’s special to me and my kids and their lives,” she says.

“We realize it’s hard along the way, and we’ve had tough moments and we’ll break down, but we ultimately know we’ll just put one foot in front of the other.

“We just figure it out as we go, which has been a theme for us.”
